Chocolate Zucchini Bread
Ingredients
1 1/2 cups almond flour
1 1/2 tsp baking soda
1/4/ cup raw cocao powder
2 tsp ground cinnamon
1/8 tsp salt
1 cup shredded zucchini
1 large egg at room temperature
1/4 cup plain Greek yogurt
1/4 cup coconut oil
1 tsp vanilla extract
3 Tbsp raw honey
Directions
Preheat oven to 400 degrees
Mix all dry ingredients in a bowl
In a separate bowl mix all wet ingredients
Pour dry ingredients into wet ingredients
Line bread pan with parchment paper
Bake at 400 degrees for 35-50 minutes
Start testing with a toothpick at 35 minutes and when it comes out clean when inserted in the center, it is done.

Gluten Free Spaghetti
Ingredients
1 small spaghetti squash that was cooked, then shredded.
1/2 pound ground beef
Two large garlic cloves minced
2 generous teaspoons of well-rinsed capers
6-8 Kalamata olives pitted
salt and pepper to taste
1 to 3 teaspoons olive oil
1/2 a lemon, juiced
Directions
Cook ground beef in a skillet and remove from pan and set aside.
Heat 3 tbsp olive oil in pan and add minced garlic to soften but do not let burn. This is to make the sauce for the “spaghetti” so be a little generous.
Add the meat to the minced garlic and add the capers, lemon juice and the spaghetti squash. Season with salt and pepper to taste and add more olive oil if necessary.
Makes 2 servings

Falafel
Ingredients
1 can chickpeas drained, rinsed and coarsely chopped
Red or sweet white onion to taste, chopped, fine but not too fine.
2 cloves garlic minced.
Salt and pepper to taste
1/4 tsp Cumin
Fresh Mint, chopped — I grow this so I put it in with abandon but cilantro or parsley would be good also.
Water, lemon juice and olive oil to hold it together.
Directions
Mix all ingredients together and make small patties.
Put 1 Tbsp Olive oil in a pan over medium heat
Add in patties and cook until browned (2-5 minutes), then flip patties and cook until browned on both sides.

Gluten free Pancakes
Ingredients
1/2 c tapioca flour
1 egg
1 banana
Some milk
optional: Peanut butter powder
Directions
Mash banana into the flour, add egg then milk and PB powder to get the right consistency.

High Protein Pancakes
Ingredients
1 egg or egg white
2T oat bran
2T flax meal
2 scoops of protein power
about 1/4 cup Buttermilk or Greek yogurt. (you can use regular nonfat yogurt) I just add it to the point of a batter consistency.
1/4tsp baking soda
1tsp Baking powder
Optional: blue berries, chopped apples, cinnamon and fresh ground nutmeg
This makes about 2 good size pancakes or three smaller.
